You will need:
- 7 cups fresh coconut water
- 5 tablespoons water kefir grains
- 1 cinnamon stick
Directions:
First, add 7 cups of coconut water to the one half gallon jar. Then place the water kefir grains in the coconut water and at the end add the cinnamon stick. Cover it and let it stay for about two days (48 hours, and no minute longer). It can explode if ferment too long.
You will know it is fermented when the water becomes cloudy and lighter in color. Also, the grains will be on the top. When the culturing process is over (when grains are on the top), remove grains. They can be used for another batch; you just need to store them in water in the fridge. And that is that!
