Ginger-Garlic Soup Against Colds & Flu

Alicin is a chemical ingredient found in garlic that combats viruses. Washington State University recently did a research that proves garlic to be much more effective than 2 broadly used antibiotics.
Alicin is created from allin when garlic is crushed. It has been found that garlic lowers blood pressure and cholesterol as well while at the same time preventing blood clots. Reducing the risk of the appearance of atherosclerosis is a characteristic of it too. Furthermore, this vegetable may be of a help in prevention of onset cancers.

A British doctor mentioned that this chemical has been popular for its anti bacterial and anti fungal properties. Due to this many people have been introducing this so-called remedy to their diets.
However, the way it works has not been actually proven.
There is two sides in this story between scientists as well. The Cochrane Database discovered that increase of consumed garlic in winter can decrease cold symptoms 5.5 to 4.5 days.
However, there is still a lack of authoritative information and research.
This is something pharmaceutical companies are not interested in, understandably. Garlic would decrease their profits.

The Egyptians gave garlic to the pyramids builders to keep them in good health and shape. The Romans gave it to the sailors, the ancient Greeks used garlic for almost every condition.
Garlic is a booster of the antioxidants in our body. Since the middle ages garlic has been used for many purposes like for example treating wounds. Moreover, UCA pharmacological scientists have found that allicin is an infection killer, that improves our blood flow and immunity strength.

Favorite recipe: Peeling garlic cloves and roast it and after an hour or so top it with lemon juice. It is vividly yummy.

Garlic Soup Recipe (Serves 4)

  • 26 organic peeled garlic cloves
  • 2 1/4 cups sliced onions
  • 2 tablespoons olive oil
  • 2 tablespoons (1/4 stick) organic butter
  • 1/2 teaspoon cayenne powder
  • 3 1/2 cups organic vegetable broth
  • 1/2 cup fresh ginger
  • 1 1/2 teaspoons chopped fresh thyme
  • 1/2 cup coconut milk
  • 4 lemon wedges

Preheat oven to 350F. Place 26 garlic cloves in small glass baking dish. Add 2 tablespoons olive oil. Sprinkle with sea salt. Cover tightly with foil and bake until garlic is golden brown and tender. This should take about 45 minutes. Let it cool. Remove the cloves. Transfer the remains to small bowl.

Melt butter in large saucepan over medium-high heat. Add onions, thyme, ginger and cayenne powder. After, cook until onions are translucent. Add roasted garlic and 26 raw garlic cloves and cook for 3-4 minutes. Add vegetable broth; cover and simmer until garlic is very tender, about 20 minutes. Mix and puree the soup in blender until smooth. Return soup to saucepan; add coconut milk and bring to simmer. Season it by preference.

Squeeze juice of 1 lemon wedge into each bowl and serve. These amount will be enough for four portions.
Although garlic is still not scientifically proven to be a miracle medicine, it is still good to have it in your home at all times, or even better to raise it in your garden.
